After a long week(s) of lots of schoolwork I needed a good homemade meal. The last few weeks I have been surviving off of Whole Foods (pre-made) vietnamese spring rolls, a salad from whatever I can find in my refrigerator, and Whole Foods samples (just kidding, but I really could eat a meal that way). But you get my point. It was time to make a meal… and enjoy it.
I knew I needed something green but ended up with purple kale.
Into this dish went:
apple cider vinegar
I began by sauteing the leeks for a few minutes in olive oil, then added the asparagus. Next went in the kale and apple cider vinegar. I actually added a little water too so that the kale would not burn and would soften up. Finally I added the garlic and then covered the pan to let the kale and asparagus steam. I cooked it for about 20 minutes.
For the Salmon, I put pesto on top and on top of that put some goat cheese crumbles. What’s a meal without goat cheese? I didn’t wanna find out so I added some…. definitely did not regret that decision.
Nothing beats a home cooked meal. (Especially when there is leftovers!)
