My kids love food that is portioned out for them. That is why we love using these silicone muffin cups for so many different things, including quiche and these potatoes. The ingredient that made these extra tasty though, was the Rosemary (for Herb week ). Right on the package of fresh Rosemary I got in the produce section, it said:
“Stir into biscuit dough, chop and toss with small potatoes, onion wedges, baby carrots, and olive oil before roasting, sprinkle on rolled out pizza dough.”
Great! We love potatoes, so we added a bit of fresh Rosemary to our scalloped potatoes.
The super easy recipe is:
Half an onion, chopped
1 clove garlic, crushed
2 TBL butter
2 TBL flour
dash of pepper
dash of salt
1 1/4 cup low fat milk
3 potatoes, sliced
1 tsp. chopped rosemary
Cook onion and garlic in butter until tender. Add Flour and mix well. Begin pouring in milk slowly until sauce is thick and bubbly. Remove from heat. Add salt, pepper, and rosemary. Peel and slice potatoes. Divide potatoes among silicone muffin cups (or arrange in a 1 1/2 quart casserole dish that has been greased). Pour sauce by the TBL over the potatoes. Cover with foil. Bake at 350 for 40-45 minutes, or until potatoes are cooked.
