Hello Saturday! What are you all doing today? Thank you again for all your caring comments about feeling better. I feel slightly better, still feel like 1/2 person, 1/2 laundromat but I guess that's staying around for a couple of days. We have a really busy weekend and part of me wishes I could have stayed home on the couch, but I just couldn't. Since I didn't feel that bad last night we drove to Newport. We have a party Saturday to go to in Rhode Island for a housewarming/engagement and Sunday I have my friend's shower also in Rhode Island. We got to the bed and breakfast in Newport super late last night, which I thought would be creepy, but it wasn't. There were so many people around. I can't wait to explore, I love it here and haven't been since college. I'll be back with pictures for you all later or tomorrow.
Since we are going to a housewarming, I certainly couldn't show up empty handed. Since I am basically baking through Brown Eyed Baker's website , I decided to go with these bars I've been eyeing for awhile now. She is an unbelievable baker and creator of all things sweet. You can see how irresistible these are, normally I don't eat much of what I bake, but these I couldn't help myself....which is why my stomach is probably bothering me still.
all spread out in the pan
use a plastic bag to drizzle the chocolate over the bars/pie
Ingredients 2 cups AP flour 1 tsp baking soda 1/2 tsp salt 1 1/2 sticks unsalted butter 1 cup turbinado sugar (or brown) 1/2 cup white sugar 2 large eggs 2 tsp vanilla extract 12 oz semi sweet chocolate morsels 1 1/2 cups mini pretzels or twists (in small pieces I put them in the food processor for a second) 1/4 cup semi sweet morsels, for drizzling 1/4 cup peanut butter, for drizzling
Preheat the oven to 350 degrees. Spray or line a 9 x 13 pan (brownie pan) with wax paper or foil. Combine the butter and sugar in a mixing bowl. Mix till fluffy, then add eggs and vanilla extract. Add in slowly the flour, baking soda and salt. Mix well. Continue to add the chocolate chips and pretzel pieces. Make sure it's all mixed up well and press into brownie pan. Bake for 30 minutes. Cook on a rack.
When it is completely cool remove from pan. In a glass bowl or double broiler melt the chocolate morsels for drizzling. Spoon them into plastic bag (shown above) and cut one corner off. Drizzle over bars. Do the same with the peanut butter. Cut them into 30 small pieces.
