Peaches & Cream

Sometimes, boys just want things to be all peachy. Sometimes, us girls want to wallop them with peaches. Hard.

Actually, PJ just loves peaches so a while back I picked up a can of Geisha peaches on sale at Walgreens. Yeah, I know. It is always better to cook with fresh ingredients...but sale! with coupon! How could I resist?

Anyway, I had intended on making like mini peaches & cream muffin cups but found my pantry ate my muffin liners. argh. That pantry and I have issues. Of course, being the scatterbrained cook I often am...I didn't notice my lack of liners until after the batter/dough was made.

Right...plan B. I used a disposable cake pan (8x8) I happened to have on hand and it turned out looking a bit more like a cobbler than what I'd originally intended...but as long as it tastes good, its okay right? Also, I only had one can of peaches, but I think two would be better if/when I make it again.

Peaches & Cream "Cobbler"

Batter Ingredients:

  • 1 1/4 cup flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp cream of tartar
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 1/2 Tbsp sour cream
  • 1/4 cup butter or margarine, melted

Filling Ingredients:

  • 2 cans peaches in light syrup, cut into chunks (reserve syrup)
  • 2 Tbsp sour cream
  • 1/3 cup cream cheese
  • 1/3 cup syrup from canned peaches
  • 1 Tbsp sugar
  • 1 tsp almond extract
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon

Directions:

1. Preheat oven to 400.
2. Mix batter ingredients together and pour into the bottom of a greased 8x8 or 9x9 pan.
3. Top batter with chopped peaches, sprinkling with nutmeg and cinnamon.
4. Mix sour cream and next four ingredients together. Microwave until sour cream and cream cheese melts and mix until smooth.
5. Pour cream mixture over peaches and batter.
6. Bake at 400 for 18 minutes; reduce heat to 375 and bake for 15-20 minutes, or until filling no longer seems runny.
