Overnight Steel-Cut Apple Pie Oats

Good Evening and Happy Saturday!

We have been tromping around in the elements today and am so happy to be home.  The day started out bright and early with The Art of Eating: Eat Your Way to Health and Happiness webinar (we had a great session) and then off we went to soccer games.  We were definitely having a rainy Portland day and spent many an hour outside in it.  Gotta love it.    All in all, we had a great day and the kids were real troopers, they played hard despite the rain and mud.  We brought them home, popped them in the showers and fed them some warm soup.  

This rainy weather has inspired me to bring out the slow-cooker and I made a warm and cozy batch of Overnight Steel Cut Apple Pie Oats!  Me oh my, these are so delicious!

Overnight Steel Cut Apple Pie Oats


Ingredients
DirectionsCoat inside of 3-1/2 quart (or larger) slow cooker with cooking spray. Add all ingredients (except optional toppings) to slow cooker. Stir, cover, and cook on low for approx. 7-8 hours (slow cooker times can vary). Spoon oatmeal into bowls; add optional toppings, if desired. Store leftovers in refrigerator. Freezes well.

To reheat single servings: Put 1-cup cooked oatmeal in microwave proof bowl. Add 1/3 cup almond milk. Microwave on high for 1 minute; stir. Continue cooking for another minute, or until hot.





I also have to admit that I loved these so much that I ate them for dessert as well.  I know that may sound a bit piggy but they are so good and I figured it was a healthier alternative to a slice of apple pie.  Yum!
I am off to lift weights and then hang with the family.
