Overnight Cherry Vanilla Almond Steel Cut Oats + Winner of the Color ME Vegan Cookbook Giveaway

Good Morning and Happy Monday!
I believe it has been a while since I have expressed my love of oats!
Oatmeal makes me "oh so happy" and it is my favorite breakfast meal.
Since the weather is starting to turn cool again a warm comforting bowl
of oats is just the ticket to start the day out right. I am an early
riser and in my attempt to not wake the rest of the family up with the
clanking of pots and pans I have been making Overnight Steel-Cut Oats. I
made my best batch to date the other day and am excited to pass this
along to you. I am a huge fan of dried tart cherries but you can use
any dried fruit of your liking. I also threw in some Salba (white chia
seeds) in the hopes that my family would not notice the addition. They
are suspect of chia seeds and I tend to like to add them into anything I
can.
Directions
Coat inside of 3-1/2 quart (or larger) slow cooker with cooking
spray. Add all ingredients except almonds and agave to slow cooker.
Stir, cover, and cook on low for 7 hours. Spoon oatmeal into bowls. Top with toasted almonds and a drizzle of raw honey.
Makes 5- 1 cup servings.
This oatmeal is so yummy that you could literally eat it for dessert or at least I am contemplating doing so. It almost has a bread pudding consistency and the tart cherries plumped up and gave it a nice flavor as well as a rosy hue.
