OTO Tofu + Sneak Peak.....

Good Afternoon and Happy Hump Day!

I hope everyone is having a good week so far......

I have been super busy with work, working on my new website (that will launch one day soon), and working on collecting art projects for our schools upcoming Auction.  I thought I should give you a sneak peak at the cover of my FREE gift that I will have on new website to see what you think.

We are still tweaking this a bit but I can't wait for you to see the whole site!!! This has been a labor of love and I hope that shines through once it is up and running.  Bliss Holistic Health is getting a major renovation.
Now, the other day one of my sweet friends brought me a huge hunk of fresh made tofu from OTA Tofu.   Thank you Pam!!

Ota tofu is a local, family-owned store that is making fresh home-made traditional japanese style tofu.  This little gem happens to be located a hop and skip from my home and makes the MOST amazing tofu.  I had bought this local product at New Season's grocery store but the huge hunk of Tofu that Pam brought me from the store was amazingly good.  Pam said the tofu was still warm when she picked it up.  Yum.  I also love the texture of the tofu.  You gotta love Portland, it is such a foodie scene here.  Pam and I were laughing how you can even dork out on buying LOCAL tofu.

So what did I do with this Tofu.....  I made one of my families favorite dishes:

Carmelized Tofu over Shaved Brussels Sprouts

Cook the tofu strips in large hot skillet  with melted coconut oil and a  bit of salt. Saute until slightly golden, about 4 minutes. Add the garlic and pecans, and cook for another minute. Stir in sugar. Cook for another couple of minutes. Remove from heat and stir in cilantro. Scrape the tofu out onto a plate and set aside while you cook the brussels sprouts.
In the same pan (no need to wash), add a touch more oil, another pinch of salt, and dial the heat up to medium-high. When the pan is nice and hot stir in the shredded brussels sprouts. Cook for 2 - 3 minutes, stirring a couple times (but not too often) until you get some golden bits, and the rest of the sprouts are bright and delicious.
Serves 2 - 3 as a main, 4 as a side 

You can serve this dish as is or serve it over a baked sweet potato as I did.  I love sweet potatoes and this makes an amazing MEAL.
