My brain is constantly exploding with recipe ideas accumulating in my head = cooking over-load on weekends. Put together a menu card in the morning to keep my thoughts on track, and I suppose it makes the meal seem just a tad more fancy than it actually is
My mom and I love wind chimes, and we got her another one to add to our “plant wall” in the kitchen for her birthday. Matched-mismatched windchimes everywhere! (Match-mismatched anything is = favourite things)
My attempt at being thrifty and chopping up whole wheat berries to turn them into steel cut oats
half a cup = 4 servings
Salmon-Oat Medley
- 4 small servings
1 tsp olive oil
1/2 cup raw steel-cut oats
1 small onion, diced
2 cups boiling water
1 diced apple
1/2 tsp salt
1/4 cup sliced leek
2 salmon fillets
1/3 cup sliced pineapples
- toast the onion and oats with 1 tsp of oil for about 2 minutes, then pour in boiling water. Simmer for about 25-ish minutes, until the oats reach an al dente tenderness. Let them sit and thicken for about another 2 minutes, then stir in the rest of the ingredients! Positive reaction from the fam … BIG sigh of relief
Yes, I’m a poor university student always on a budget, but the fact is.. scallops are delicious… and expensive It’s an… OPTICAL ILLUSION! … I think i’m more clever than i actually am…
Topped with walnuts and sucanat sugar to complete the disguise
