One Dish Dinner: Baked Spaghetti Squash

My favorite type of things to bake/cook are one pot, one dish meals. My baked treats usually only involve one big mixing bowl because I make a big enough mess as it is, that I don’t need more bowls to help me along.

I’m the same way about dinner. I usually make a big enough mess in the kitchen that by the time Danny walks in the door, it’s halfway cleaned up…okay a third cleaned up..(a fourth cleaned up?) Depends on who you ask I guess…(Don’t ask my mom.)

Yesterday I came home and wanted a very simple, hot, breadcrumb-y meal.  I also didn’t want to spend a ton of time cleaning up (/making Danny clean up…) So a one pot meal was born.

I’m pretty sure I’ve seen something like this from Jess , but I didn’t look at any recipe to make this. Now looking back at that recipe, it’s pretty similar, but I just kind of concocted it. Jess, you and I are so on the same page! So if you want an easy, one post dish, try this out. It would also be even more awesome with some mozzarella, but I’m all out.

Baked Spaghetti Squash

Ingredients

  • 1 cooked spaghetti squash (I cooked mine in my microwave)
  • 1 pepper (I used orange), diced
  • 1 zucchini, diced
  • 1 cup of mushrooms, chopped
  • 1/4 of a red onion, (about 2 tbsp), diced
  • 1 1/2 – 2 cups fresh spinach, broken up
  • 1  28 ounce can diced tomatoes
  • 10 black olives, chopped
  • 1 tbsp basil
  • 2 tsp oregano
  • 3/4 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 cup pecorino romano grated cheese
  • 1/2 cup bread crumbs (I used a toasted slice of my quinoa bread and threw in processor to make bread crumbs)

Preheat oven to 400 degrees. In a medium sized casserole dish, combine spaghetti squash and all vegetables and olives, adding diced tomatoes last. Mix up well in dish. Add basil, oregano, salt and pepper. Mix up again. On the top of the dish, sprinkle the grated cheese first and then the breadcrumbs. Cover and bake for 30 minutes. Remove cover and let bake for 10 more minutes. Enjoy with some bread or some meat.
