On my last post I mentioned that I was trying out some new recipes for Easter. A Sausage-Stuffed Mushrooms Recipe that I had seen on a Barefoot Contessa episode was one of the appetizers I made.
I decided to make as many things as possible a day ahead so I could enjoy Easter with my husband and friends. The Sausage-Stuffed Mushroom Recipe was the perfect appetizer to make ahead. Assemble took about an hour because of chopping and cooking, but it was well worth it. I baked them prior to guests coming so it worked out well.
Before I saw Ina Garten prepare the Sausage-Stuffed Mushrooms on the Food Network Channel I had never really attempted making stuffed mushrooms before. The recipe calls for mascarpone cheese which I love, so between the sausage and mascarpone cheese, Ina had me sold and I couldn’t wait to try out her recipe.
They were absolutely delicious. Everyone loved them. There were only four of us having appetizers and even though we had two other appetizers served, we ended up with one Sausage-Stuffed Mushroom left on the dish. No one wants to take the last of anything, especially food.
Hope you get to try this recipe, it’s definitely a keeper. Enjoy!
