Oh…well, hey there, hi there, ho there!

(Said in an obnoxious Minnesotan accent)

Instead of telling you about my 7am dentist appointment which got rescheduled after I got there, my torrential walk in the rain to work ruining my fave leopard print ballet flats or the fact I’ve felt like crap for a couple days, shall we get straight down to the foodie business?  You betcha!

1/2 cup oats
1/2 cup water + 1/2 cup organic skim milk
pinch salt
1/2 cup pumpkin
drizzle of Xagave
cinnamon, nutmeg + ginger
blop of PB&Co. DCD



Yes, I swear that is just Dark Chocolate Dreams PB in my bowl…not baby poop.  Speaking of baby poop, this bowl looked like infant food and tasted so. dayum. good.  If this is how babies eat, I can easily retreat to acting like a six month old.  Easy.

Snacktime was some Mary’s Gone CrackersOnion discs of love along side a nice tupperware of sliced locally-grown yellow peppahs.



In addition to wanting to be British, I also want to have a bad a$$ Boston accent.

My lunch featured my new fave thing… Homemade Greek Yogurt!  If you haven’t read Miss Nellie’s fabulous guest post already, go here and brush up on how to make thick, creamy Greek yog for less than 1/2 the price of the brand stuff.



As I was ready to devour this beauty, a guy stopped by our office looking for our boss.  Our convo went something like this…

“Can I ask you for a pen and paper to leave your boss a note?” he says.

“Sure,” I says, fumbling around for a notepad and writing utensil.   “Here you…”

“And can I also ask you, what is that stuff on top of your salad?” he cuts me off.

“That’s yogurt.  And the stuff on top is peanut butter,” I reply.

Ummm…who mistakes salad for yogurt?  And who doesn’t know a loving heart of Mighty Maple PB when they see it? Apparently, the world still has a lot of learn about yog messes made of homemade Greek yog, smashed banana, Dylan’s Chia granola + Mighty Maple PB. A lot to learn.

The afternoon involved lots of pretzels + Diet Coke.

After work I went to a lovely 75-minute Vinyasa Flow yoga class.  Twas’ exactly what my body needed, except for the awkward touching by my male yoga teacher trying to correct my poses. He just had a general creepy vibe, which is too bad because I really enjoy the class. Those chaturangas are going to make my arms plead for mercy tomorrow.

My appetizer was a sweet potato with a smidge of coconut oil and a smidge of Mighty Maple PB



The main course was 1/2 roasted acorn squash stuffed with some sweet potato black bean mixture and drizzled with maple syrup.  This baby was going down, down, down, down, down Jay Sean-style.
