Oatmeal Raisin Coconut Cookies

With the new year upon us, I know many of you are trying to cut back on sweets and become healthier in 2012! However, you don’t have to give up sweets completely. This recipe is not only good for you, its perfect for those who have a sweet tooth. If you like them, you’ll have to thank my girlfriend, Taylor, for the recipe!

Oatmeal Raisin Cookies

  • 1/4 Cup White Sugar
  • 1/4 Cup Brown Sugar
  • 3/4 Cup Flour
  • 1/2 Unsweetened Applesauce
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp Cinnamon Sugar
  • 1 Cup Raisins
  • 1 Cup Shredded Coconut
  • 1 Cup Oats


All you have to do for these cookies is add all ingredients in a bowl, and mix it up by hand. Shape the batter into spoonful size balls, and place on cookie sheet. Bake at 350 degrees for 10 minutes, or until golden brown. Makes a dozen decent sized cookies.
