
Good afternoon! I wanted to share with you this recipe for Oatmeal, Dark Chocolate and Cranberry Cookies. I made these for the potluck graduation party yesterday and everyone seemed to really enjoy them!
I came up with this recipe on my own and I think they turned out pretty good!
Dark Chocolate and Cranberry Cookies Oatmeal Dark Chocolate and Cranberry Cookies
1 cup Whole Wheat Pastry Flour
1 tsp baking powder
1/2 tsp baking soda
2 tbsp unsalted butter, softened
1/2 cup of natural cane sugar
1/2 cup of brown sugar
1 egg whites
1/4 cup of unsweetened applesauce
1 tsp vanilla extract
1 1/2 cups rolled oats
1/4 cup wheat germ
1/4 cup of ground flaxseed
1 cup of Dark Chocolate Chunks
1/2 cup of dried cranberries
Preheat oven to 375 degrees. Sift together the flour, baking powder, baking soda and salt. In medium bowl beat the butter and brown sugar . Beat in the brown sugar and then the egg. Add applesauce, followed by the vanilla. Gently stir in the flour mixture, the oats and the rest of the ingredients.
Drop by tablespoons on 2 cookie sheets lined with parchment paper. Bake for 10-12 minutes, or until they are still moist and soft. Cool and enjoy!

I indulged in two cookies yesterday! Luckily the rest got eaten up!
