Good morning! Hope your weekend is off to a good start! This morning, I ran a 10K on the Isle of Palms. I ran the same race last year . Last year, I finished in 50 minutes & 48 seconds….this year, official time was 48 minutes & 01 second!! Some pictures from the event. T-shirt & bib:

I realized yesterday that I have been posting a LOT of baked goods. I promise I am still cooking, my baking has just been a lot more interesting ;). I also realized yesterday that I had some eggs that were approaching their best by date….so I decided to bake some more.
Oatmeal Chocolate, Chocolate Chip Bars
Ingredients:
2 cups dry oats
1/4 cup unsweetened cocoa powder
½ cup all-purpose flour
1/4 cup packed brown sugar
1/2 cup chocolate chips
1/4 cup applesauce
1/4 cup vegetable oil (you could also use more applesauce)
2 eggs or ½ cup egg substitute
Directions:
Preheat oven to 350 degrees F
Mix first 5 ingredients
Add remainder of ingredients and mix until well combined
Spray pan and press mixture into the bottom
Bake for ~25 minutes
Let bars cool completely, cut into squares
What are you up to for the rest of the day? I am planning on doing some more baking (granola), learning my choreography for our program launches at the gym next weekend & watching lots of college football (GO PENN STATE!!!).
