My Week of 15 Minute Meals

Before tonight’s awesome meal plan, I have a challenge for y’all.  I have a soccer ball, signed by Brandi Chastain to give away!  Here is how to enter.  First, take the pledge to help young athletes.  The pledge says:

The goal is 10,000 pledges and Gatorade will donate $10,000!  But, they are only at 901!  Long ways to go, right?  So, after you sign the pledge , come back here to tell me you did, and I’ll choose a random pledge signer to send my Brandi Chastain soccer ball too.  Deal?  You can even let me know on Facebook , and you’ll still be entered.  Here or there and your entered. Who is ready for another quick meal plan? I’m desperate for one.  Last week I had a really hard time getting my planned meals on the table, and instead we resorted to sandwiches and cereal. This week will be different!

These dinners I got from a Cooking Light Special Issue, called 5 Ingredients or less 15 minute recipes.  Lucky for us, they were all online!  As long as I have all the ingredients each day, I should be posting these dinners every night on Facebook !  Wish me luck!

  Breakfast Lunch Snacks Dinner
Monday Coconut berry oatmeal Peanut butter and jelly on whole wheat with carrot sticks and cucumbers String cheese plus orange Edamame and Steak stir fry
Tuesday Peach and yogurt smoothies with whole wheat toast Whole wheat wrap with lettuce, sprouts, tomatoes, and cheese Almonds and dried cranberries Spinach, tomato, and Fresh Mozzarella pasta salad (with added shredded chicken)
Wednesday Omelets with bananas and toast Almond butter and honey on whole wheat rolls with red peppers Rice cake with hummus Fresh-Mex Pork with salsa and avocados
Thursday Cereal with yogurt and thawed berries Ham and cheese on whole wheat with celery and apples Graham crackers and hard boiled egg Mushroom stroganoff (made light)
Friday Yogurt and cottage cheese with peaches Veggie quesadillas plus applesauce Frozen fruit popsicle Pan Grilled pork chops with grilled pineapple salsa
