If any of you read my other blog:Deliciously Healthy Everydaythen you know I'm working to incorporate more raw foods into my diet. So far I've been doing simple stuff, but now I'm starting to get into the meat (haha) of raw recipes. You may also be thinking, wait what about themango avocado salsa, wasn't that raw? Well yes it was, but salsas are almost always raw, so I consider this my first real raw recipe since I went out of my way to make something raw. I got the idea from bothGena's blogandSweet and Natural, and made only a slight change. It made me realize I really need a good vitamix and/or food processor. Sigh...someday, when I actually have a kitchen larger than a broom closet. Anyway, here's the recipe and some food porn quality pics. Who knew avocado could look so sexy?? Chocolate Avocado Pudding: (makes 2 servings)
1 Avocado
4 Medjool Dates, pitted and Chopped
1/4 Tbsp Raw Honey
3-4 Tbsp Cocoa Powder (depends on how superdelicisouly chocolatey you want it, of course I used 4)
1/4 Apple, diced (you can use applesauce here instead, if you aren't trying to keep it raw)
1/4-1/2 Cup Water (use as much as you need to get the consistency you want)
Put all ingredients into a food processor if you have one, if you are like me you can throw it into a blender. My Serving Suggestion: now, this is simply a suggestion, but I hiiiiiiiiiiiiiighly recommend trying it. I served mine layered with banana almond pudding. It is a very very complicated recipe, but so worth the work. Banana Almond Pudding:
Moosh up a banana and some almond butter together. Now all you have to do is layer them like so. Isn't that pretty?
