I can't believe that the summer is almost over. We have a few more days until school starts and we plan to make the most of them! I am excited for this coming Fall but have really enjoyed spending most of the summer in Portland. The weather has been glorious and it makes you forget all about the drizzly, gray days of the past. Today we are going to go swimming, skate/bike/run in the park and then go eat Pizza for dinner! Pretty much get to do all my favorite things today. I started out the day with a beautiful bowl of Multi-Colored Quinoa topped with a fresh, local and perfectly ripe Peach, toasted walnuts and a drizzle of raw honey. Oh my gosh.... this was amazing! 1/4 cup multi-colored dry quinoa 1/2 cup water 1 ripe peach, diced 1 tbsp walnuts, toasted drizzle of raw honey Bring quinoa and water to a boil in a small pot. Cover with lid and reduce heat to a simmer. Cook for 15 minutes or until liquid is absorbed. Top quinoa with diced peaches, walnuts and a drizzle of honey. Enjoy! This was a fantastic way to start the day and am going to try to eat lightly the rest of the day so I can enjoy our pizza dinner. We are celebrating the end of a successful summer and the beginning of a great year ahead. The kids are super excited about going back to school and I am excited about a few things that I have on my plate as well. Steve has completed his first week of his 2nd year of law school and is a wee bit overwhelmed but know that it will pass or get worse. but whatever the case he will survive!
