Multi-Colored Quinoa topped with Fresh Peach, Toasted Walnuts and a Drizzle of Raw Honey

Good Morning and TGIF!!

I can't believe that the summer is almost over. We have a few more days until school starts and we plan to make the most of them!  I am excited for this coming Fall but have really enjoyed spending most of the summer in Portland.  The weather has been glorious and it makes you forget all about the drizzly, gray days of the past.  Today we are going to go swimming, skate/bike/run in the park and then go eat Pizza for dinner!  Pretty much get to do all my favorite things today.

I started out the day with a beautiful bowl of Multi-Colored Quinoa topped with a fresh, local and perfectly ripe Peach, toasted walnuts and a drizzle of raw honey.  Oh my gosh.... this was amazing!

Multi-Colored Quinoa topped with Fresh Peach, Toasted Walnuts and a  Drizzle of Raw Honey
1/4 cup multi-colored dry quinoa
1/2 cup water
1 ripe peach, diced 1 tbsp walnuts, toasted drizzle of raw honey

Bring quinoa and water to a boil in a small pot.  Cover with lid and reduce heat to a simmer.  Cook for 15 minutes or until liquid is absorbed.  Top quinoa with diced peaches, walnuts and a drizzle of honey.

This was a fantastic way to start the day and am going to try to eat lightly the rest of the day so I can enjoy our pizza dinner.  We are celebrating the end of a successful summer and the beginning of a great year ahead.  The kids are super excited about going back to school and I am excited about a few things that I have on my plate as well.  Steve has completed his first week of his 2nd year of law school and is a wee bit overwhelmed but know that it will pass or get worse. but whatever the case he will survive!

So now the questions is where should we go for Pizza in Portland???

    We have tried Apizza Schools, Ken's Artisan and Al Forno Ferruzza and would like to go someplace new.  I think we are going to head to The Pearl District because we want to stop at Powell's Book Store so it looks like Deschutes Brewery may be the winner! 

    The mailman just came and a present from Amazon happened to be in it.  Steve ordered a book called The Omega Diet- The Lifesaving Nutritional Program Based on the Diet of the Island of Crete by Artemis P. Simopoulos, M.D., and Jo Robinson. 
After all this discussion of cheese-laden pizza eating, I will need a good read to counteract the effects.  I am a big believer in "BALANCE" and "Everything in Moderation."  Honestly, I hear about some crazy diets at work from high protein diets to the vegan diet and understand that not one diet fits all.  You have to figure out what works for you and your body and also a diet that you can live with.  I am looking forward to learning more about the The Omega Diet and will definitely share my thoughts with you.   I am slowly figuring out what works for me and know that it is a life-long journey.  I am always interested in hearing from you guys..... let me know what your diet looks like and what has been working for you.

We are off to swim so I will touch base later with a review of where ever we end up tonight.  I also have some baking I need to do for Labor Day so look forward to sharing something special with you soon.
