Mother's Day Blueberry Almond Oatmeal Bake + Pacifica Perfume Giveaway Winner

Good Evening and Happy Mother's Day!

I pretty much "milk" the whole Mother's Day thing and instead of just having a one day celebration. Mother's Day starts on Friday and continues until Sunday:)

My husband took me to my favorite restaurant- Blossoming Lotus for lunch on Friday.  This was my husband's first trip to Blossoming Lotus and he was not to excited about going to a vegan/raw restaurant.  I knew once he tried it he would love it and he did!  This made my whole weekend and Steve even wants to go back next Friday.  I am so in heaven!

The love began with an order of

Live Nachos
spiced tomato & walnut chips, zucchini tahini nacho cheese and ground pecan chorizo, topped with red onion, tomato, cilantro, scallion, cashew sour cream, and avocado dressing, served with a lime wedge 


 Steve was blown away by the taste of these Nachos and I was too!  I have order the Live Pizza before but not the Nachos and now I am literally craving them.    OMG-- these are amazing.


I also ordered my favorite Thai Green Juice-apple, lime, ginger, basil, cilantro.


 I branched out and ordered

Tofu & Greens
wok tossed tofu and seasonal greens, with sweet bell peppers, shiitake mushrooms, butternut squash, and a sweet tamari glaze, served over your choice of brown rice or quinoa, garnished with slivered daikon and sprouts. 


This dish is simply delicious. It was also huge and I was able to bring half of it home to eat for dinner.


Steve ordered the:


Whiskey Ginger BBQ Sandwich
seasoned soy curls, sauteed with red onion and a smoky whiskey ginger barbecue sauce, with romaine, tomato, micro greens and lemon wasabi aioli, on a toasted ciabatta roll .






Steve said it tasted as good, if not better than the real thing.
I can't believe it.  My hubby now likes my favorite restaurant and is an oatmeal lover, now if he can just learn to run with me then I wouldn't know what to do with myself. Ha!  Honestly, I am a super lucky lady and I love my husband just the way he is but I can dream....
Now, on to Mother's Day!  I had a really nice, long chat with my Mother this morning and it was great to catch up and send her my love.  I also shared the following recipe with her for a fabulous  Blueberry Almond Oatmeal Bake.  



Mother's Day Blueberry Almond Oatmeal Bake

  • tablespoons butter, melted
  • 1/2 cup sucanat or brown sugar
  • eggs
  • cup applesauce
  • 1 1/2 cups unsweetened vanilla almond milk
  • 1 tsp vanilla extract
  •  3 cups rolled oats
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • teaspoon cinnamon
  • cup blueberries fresh or frozen
  • 1/2 cup raw sliced almonds 
  • 1 Mix butter, sucanat, eggs, applesauce, milk and vanilla extract. 2 In separate bowl mix oats, baking powder, salt and cinnamon. Combine with wet mixture and add blueberries. May add more cinnamon to taste. 3 Pour into greased 9 x 9 inch baking dish. Sprinkle with almonds. May be placed in refrigerator overnight. (If so, allow 5 to 8 minutes additional baking.).  4 Bake in a 350 degree oven for 35 minutes. 5 Cut into squares. Top with whipped cream or a drizzle of maple syrup.
