Garden, sugar snap or snow, green peas are in the peak during the summer months and can be a great menu addition because of their sweet flavor and concentration of vitamins and minerals. They are a rich source of energizing B vitamins, including B1, B2, B3, B6 and folate, which are also essential for the proper metabolism of fats, proteins and carbohydrates. Peas are also a good source of vitamin K, an essential for bone health, and contain ample amounts of Iron and vitamin C. I prefer fresh snow and snap peas or split pea soup: childhood dinner table trauma ruined me to canned peas. Yuck.
