I love the weekends! Ahh... I am enjoying a cup of Joe finishing off the most wonderful bowl of oats and enjoying this quiet time before everyone else wakes up!
I really can't express how much I love my Vanilla Date Oats... I look forward to making them and enjoying them and have even thought about making them for lunch when I have already enjoyed them for breakfast. I am going through one of my phases, so bear with me (you have already seen many pics of the same thing) but these Oats put a smile on my face in the morning and seem to make it hard to wipe off.
I truly am obsessed with food, I love the whole buying and preparing and especially the enjoying part and these oats happen to be one of my TRUE LOVES at the moment.
Vanilla Date Oats
1/2 cup of rolled oats 1/2 Silk Vanilla Soy Milk with Added Fiber 1/2 cup of water 1 tablespoon of ground flaxseed 1 tsp Cinnamon
Cook for 4-5 minutes over medium heat. Remove from heat and top with:
1 tablespoon of wheat germ 2 chewy dates, diced 6 Blue Diamond Oven Roasted Cinnamon Brown Sugar Almonds, chopped
I got hijacked yesterday into taking the kids to a wonderful moving called Monsters versus Aliens. I say this with a smile on my face... but let's just say it was a cute kids movie but no cinematography masterpiece. Who could resist these little faces?
They had already convinced me to take them to Yogurt Planet after Kumon (since I am such a "mean" mom and make them go to math enrichment class on Fridays!), the theater happens to be right across the street and since they can both read... they got all excited that the Monsters versus Aliens movie was going to start in 15 minutes... Please, please,.... needless to say we enjoyed our Yogurt Planet- love that place and headed over to the movies.
I enjoyed a rather large serving of Tart Yogurt with Kiwi, Mangos, Strawberries, Blackberries, sprinkled with coconut, chopped peanuts and chocolate covered pomegranate seeds. Yum!
We also had a Celebrity Sighting yesterday, no joke, we were walking down the street and we saw Paul Mitchell, his wife and son. They look exactly like the ads for their shampoo. I am not sure what they were doing at the Hill Country Galleria in Bee Cave, Texas but it really was them!
When we got home from all of our fun, I debated about not eating dinner and trying to get to my "Super Happy Weight" this morning, but hunger won out and I made myself a quick Bean and Cheese Quesadilla. This is such a comforting meal... ooey, gooey and cheesey!
Bean and Cheese Quesadilla
1 La Tortilla Factory Smart & Delicious Whole Wheat Tortilla 1/3 cup of Fat Free Refried Beans 1/2 cup of 2% Milk Mexican Cheese
Cook over medium heat for 2-3 minutes.
Serve with Avocado and Salsa.
Today we are off to our niece and newphew's First Communion Ceremony and party afterwards. I am not sure what else is on the agenda but we will be away from home for quite some time and we had a very disturbing incident happen yesterday!
After coming home from all our activities, the kids ran to the garden to check out our beautiful banana pepper.... only to find out that Gumbo (our dog) had had a little snack in the garden! He ate our first banana peppers and the kids were absolutely CRUSHED! I thought someone had been seriously hurt with all the screaming and crying.... I ran outside to find my son chasing Gumbo around the yard, crying and screaming and the same with Zoe. It was quite a scene... it took me a few minutes to figure out what had happened! The kids love our little garden so much and take such good care of it.. that this really was a big blow. We are going to spray it with our home remedy of Egg Whites, Dishwashing Soap and a Habenero Pepper to see if this wards him off today but I think we are going to need a little fence around it.
I am not sure how much they love Gumbo today but we are going to be picking up a few garden supplies today as well!
