I found this recipe on Pinterest, and it is the BEST idea. I changed it up a bit to my liking, but this is a great recipe for a quick breakfast or even portein packed snack.
Mini Veggie Fritattas
8 Large Eggs
1/2 C Milk of choice(I used Coconut Milk)
1 C chopped cherry tomatoes
1/2 C chopped green bell pepper
1/2 C chopped baby spinach
Salt and Pepper to taste
There are so may options for toppings, and the combinations are endless. Here are just a few ideas:
Different types of cheese:Gruyere, cheddar, Parmesan, or even a fresh goat cheese
bacon, turkey and pork
various colored bell peppers
lump crab meat
Spray 1 muffin tin (12 cups) with nonstick spray. Whisk the eggs and milk in a large bowl to blend well. Season generously with salt and pepper. Fill prepared muffin cups 3/4 of the way to the top with the egg mixture. Sprinkle in and distribute toppings evenly.
Bake at 350* until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Let cool for a couple minutes and loosen the frittatas from the muffin cups. Serve immediately warm or pack away for a quick breakfast, or even a veggie and protein packed snack for later in the week.
