Hey guys! 

I know I haven’t blogged in a bazillion  few days, but I’m back! I just needed a couple days to relax and hang out with the boy, who left this morning. Hopefully I’ll be able to see him in a couple weeks, but usually it is not so often! I knew you guys would understand =)

Anyway, I was as good with BFL eating as I could be- not 100%, but not bad at all. In fact, I lost 2.2 pounds last week switching it up a little to my own preferences, and I guess it’s working! 

I’m not going to bore you with all of the details of the last few days. But, up until today I had a wonderful time! A recap… 

Sunday

Relaxed in the morning!
Did my HIIT outside  which was nice, but HARD!

Breakfast was the usual, Eggs, Veggies, LCL + toast with Better’n PB!

I ate a late breakfast so I didn’t have a mid-morning meal, I hopped right to lunch where I devoured the leftover half of my Greek Calzone with marinara sauce from the Mews. Along with some carrots on the side for extra veg power.

I went grocery shopping with my mom + nick to get ingredients for dinner and the afternoon’s baking excursions!

When we got back, Nick and I set out to make 2 batches of Vegan Apple Crisp Muffins with the fresh apples! I did lots of licking of the bowls… hey, they were healthy! And I snacked on a big honeycrisp as they were baking. 

I did some school work in the afternoon (yuck), then put together a delicious BFL-friendly dinner!

I used Danica’s recipes for Filet Mignon with Cheesy Bacon Smashed Potatoes. I omitted the bacon from the potatoes and used Eye Round steaks instead of Filets, but otherwise they came out fab!!

My mom, dad and especially Nick loved them!
I ate 2/3 of my steak. It was thick!

I had intended on having a muffin for dessert, but I passed out   around 9!! I was exhausted. 

Monday

I convinced Nick to stay an extra day (hehehe…) well, actually he had to come to campus to meet up with a couple of his old professors. But he was going to leave after and instead stayed the night. 

I started my Monday with a nice UBWO- I can feel it in my triceps today!

Breakfast was something warm, because it was COLD- 30 degrees up in herr! COLLDDD!! 
Car oatmeal, of course =)

Meal #2 was an apple muffin crumbled into 0% chobani. Delicious if I do say so myself!

After classes I met up with Nick and my cousin to grab some lunch. We went to International Pockets/Steak house so Nick could get himself his favorite Philly Cheesesteak and I could go the healthier route and get myself a baked falafel wrap. I usually get it with everrrrrything on it… but I was a good BFL-er and just got the baked falafel with a teeny bit of tabbouleh, hot sauce, hummus, lettuce, tomato, banana peppers, onions, cuke and a teeny sprinkle of feta. Twas amazing! I devoured it, of course. And I even resisted the large piece of free baklava! I had the tiniest taste and handed it over to Nick. I felt very good about that.

I came home, napped with the boy and did a bit more school work before I had to go to work. Nick gave me a ride, and we stopped at the puppy store on the way there! Too bad we don’t live in the same country right now and we can’t get a puppy =(, they sure were cute!

Work was alright. It was made better by the awesomly delicious Z-bar…

And dinner was boring, but did the trick. Tuna salad with cottage cheese + pickle relish, carrots.

Dessert was a HUGE nectarine that Nick stole a few slices of. Jerk. (just kidding…)

Tuesday 

  I was sad to say goodbye to the boy this morning… he leaves all the time, you think I’d be used to it by now! I drove a teary drive to the gym and worked out my frustrations with an awesome treadmill HIIT workout. I hit 9.6 mph again today and it felt GREAT!

After my not-so-perfect weekend, I wanted my eats to be super clean today to make up for it. 

Breakfast was the return of the Chocolate Banana Breakfast Milkshake Smoothie!! Switching it up with the protein powder again, love the chocolate. 

Meal #2 was an apple muffin. I should have paired this with some protein- I was super starving by the time Biochem was finished! 

I packed a healthy lunch- my usual turkey wrap with all natural turkey, LCL wedge + Annie’s honey mustard on a low carb wrap, farm fresh carrots on the side. 

I had a big Honey Crisp apple about an hour and a half later- we were only making fondant in lab and I knew that wouldn’t be enough for a snack! 

I did however have 5 or 6 big tastes of the fondant varieties, as well as  sipped some sweetener solutions to compare. Some of the fondants were good- some were NOT, blech. We had to add Corn Syrup to the basic mix and it almost didn’t come out! It was so sticky! Frustrating, but fun nonetheless. 

I came back home and was craving something pure and healthy after all that sugar!!

A hugh-jass salad with mixed greens, tomato, steamed asparagus, corn, chicken and kalamata olive hummus with Texas Pete. Yum! 

Dessert was my fave…

And that is all for tonight.

The week only gets busier… 

  • Class + Volunteering Wednesday
  • Class, Volunteering + Work Thursday
  • Class, Meeting, Flu shot (eep!) Friday
  • Work all day Sat 

Oh, and not to mention my paper due Friday, Exam on Monday and  report due Tuesday. I am a busy girl!
