After a weekend filled with steak and roast beast, a rarity in our diet, I wanted to fill our bellies with grains and vegetables. We went to an amazing wedding at the Museum of Science and then down to see our friend’s the Lo’s in Rhode Island. Phew! After all that rich food, I decided that our household should take part in an entire day of Meatless Monday . For dinner I made chive & parmesan polenta topped with strained Pomi tomatoes, onions and broccoli.
It really hit the spot!
A whole day of fruits, veggies, and whole grains really does the body good!
Tomorrow I’m going to Life Alive with Nyssa for lunch (I promise to take pictures) and then Dave & Brita are making dinner- I can’t wait to see what they come up with
