Mastering The Art Of The Microwaved Egg

Happy Tuesday!

I have to admit, I was NOT in the greatest of moods this morning. Actually, I was rather Oscar the Grouch (that’s how I described myself to Ryan when we talked on my break around 8:15). But seriously, you would be too if you got BLASTED by the sprinkler system at 3:45 a.m.:( My car was directly in the line of fire and there was no getting around it. I got soaked and my hair was all wet with nasty sewage water when I got to work. Meh.

However, I had the BEST SNACK YET this morning and it kept me going strong at work for a full 5 hours. No empty starving feeling in the pit of my belly while I worked. It was awesome and proved to me that I definitely need a larger snack in the early hours than what I have been eating

A delicious, hot and gooey egg & cheese bagel half with the other half of a banana from the other day (was on its last leg in the fridge!). For the bagel sammie, I used half of a Pepperidge Farm Fruit & Grain bagel and topped it with a slice of 2% cheddar and two microwaved egg whites. For some reason, I’ve always been very scared of putting eggs in the microwave! I tried one time about a year ago and the egg white totally blew up at me so I’ve stayed clear since. However, I always watch in envy as other bloggers get it perfect ( Tina & Gina!) and so this morning I decided to try again. I sprayed a tiny ramekin with pam and then added two egg whites and a pinch of salt. I zapped it for one minute and it turned out perfect!!! Totally light and fully and such a cute little shape. I will definitely be doing this more often because it is soooo fast and you don’t have to get pans messy. Doing the micro-egg-white approach is perfect for my morning snacks because it gives me another fast shot of protein to help me stay satisfied until breakfast.

As for breakfast, I had some overnight muesli- -

1 yogurt + 1/2 cup muesli + 1 spoonful ab and raspberry preserves. Delicious and filling! I just love this combo. A great alternative to oats.

My bad mood lifted throughout the morning and I had fun baking a chocolate and vanilla vegan cake for the wedding cake tasting today!

Yummy meals to sample!! I can’t wait! I think I want one tonight…. what should I try first?! I’ve actually never tried any of these before. I’m so anxious to try the new line of southern meals but that Indian entree looks delicious and I loooove me some paneer cheese! Thank you so much, Kimberly…what a great addition to Meatless in March!

For lunch I made a quick wrap using a morningstar farms original grillers burger, a tiny bit of ketchup, a TON of texas pete, lettuce and about a fourth of a delicious ripe avocado ….all wrapped tightly in a warm Rudi’s 7 grain and flax wrap!

Man………I don’t mean to complain to you snow birds up there but it is 80 degrees outside!!! Should I brave it and wear my camel bak for the 3 miles I have planned or do I treadmill it??!! As Caitlin was saying earlier, running in the heat is just something we Floridians have to deal with and it can be tortuous and even dangerous! I don’t think running 3 miles in 80 degree heat is dangerous, but I wouldn’t run if it was over 80. That is usually my cut-off point. In the days to come I might have to run on the treadmill during the week and then have one long run outside in the early early morning on Saturdays. I’m feeling SO optimistic about my shins its not even funny (although I don’t want to jinx it…knock on wood knock on wood!). I’ve been stretching so much, as well as doing a couple shin strengthening exercises daily, and they haven’t been bothering me at all. Last fall I could hardly get out of bed in the morning without excruciating pain, but now I finally feel like I am really advancing in my mileage (3 miles is sort of a big deal to me) and I’m doing it by strengthening my legs and increasing my cardio endurance! Let’s hope I keep on feelin’ good…….
