Ingredients 1 bunch kale, de-stemmed, torn into bite-sized pieces 1/2 tsp Himilayan Pink Salt or kosher salt juice of one lemon 1 tbsp raw honey 1/4 cup golden raisins 1 pear, diced (you want a crunchy pear not a juicy pear) 1/4 cup hazelnuts, raw or toasted, chopped I had bought some beautiful pears and hazelnuts at the Farmer's Market yesterday so wanted to use those in the salad but you can obviously play around with your raw fruit, nut and dried fruit choices. Jeannie's salad hadApples, Golden Raisins and Sunflower Seeds Yum! I used the juice of 1 lemon and 1 tbsp of honey and felt that it did not need any oil but you could also use vinegar and oil. Toss and Serve. With Fall coming and school starting, I have been making a list of some of the things I want to accomplish before the end of the year. I am always trying to eat healthier but feel that I have slipped into some bad habits and want to eat more leafy greens, veggies and whole grains. I need to come up with a healthy food plan that I can stick with. Eating more salads, healthy soups and limiting my dessert intake are some of my health goals for this Fall. I also want to find and stick to a workout program that works with my schedule. Since going back to work I have been squeezing in a workout every day here and there but would like to sit down and come up with a more succinct schedule that includes yoga and swimming. Fridays are my day off and I have been dying to try out the Yoga Pearl studio and then eat a healthy lunch at Prasad. It sounds a little indulgent doesn't it???? Prasad is an offering of sustainable organic cuisine to nourish and heal the mind, body and soul. Here to honor our earth, community and one another, we gratefully utilize the precious ingredients of dedicated farmers, fostering change to provide a future of health, love and respect for all. I have tried to convince my family to go to Prasad but there does not seem any interest. Therefore, I am forced to take myself out to lunch. Ha! A few of the things that I think sound amazing are the: BLISS SALAD dried currants, calimyrna figs, walnuts, quinoa, beets, carrots and mixed greens with lemon ginger dressing URBAN BOWL mixed greens with olive oil, steamed kale, sprouts, arame, wakame & dulse, avocado, carrots, scallions, sesame & hemp seeds with choice of sauce sauce : lemon ginger, garlic tahini, green chili, peanut, jalapeno cheese BRAVO BOWL (raw) yam rice, shredded kale, avocado half, walnut taco crumbles & fresh tomatoes with a side of jalapeno cashew cheese One of the above along with a WELLNESS TODDY lemon, grated ginger, honey, cayenne and echinacea in hot water after a challenging yoga class sounds like a perfect way to spend a Friday morning! Let's see if I actually do this anytime soon. It is on my list of goals for this Fall. My health and fitness goals so far are to Eat Healthier Eat lots of veggies and dark leafy greens Drink more water and green tea Limit sugar intake Increase Strength and Flexiblity Lose 5 lbs Time to get back on track!! I hope everyone is having a great holiday weekend. We had a great time at our friend's house last night. Jeannie made the most amazing Kale Salad and I have been dreaming about it ever since. I love Kale and had picked up 3 bunches at the Farmer's Market yesterday and now I know what to do with it! Jeannie's version had apples, raisins and feta cheese. My version is slightly different but follows the same basic concept. Both are delicious and I would recommend either one.
The health benefits of kale is endless. It is an incredibly healthy vegetable and I like to call it a superfood! I recommend it to all my clients and am going to start giving out recipes for these salads because some people don't care for kale but I think these simple salads will change their minds.
