When it comes to salads, i am not exactly a dressing type of guy. I more or less just try to flavor the dish with all of the yummy stuff i put in it like nuts, fruit, mushrooms and of course the delicious avocado. But i must admit, this dressing may have converted me!
The Maple-Mustard Dressing (pg 93) may be one of the best dressings i’ve had in a long time. I don’t care for thick, creamy dressings, but prefer a lighter one like vinaigrette. This mixes both my love for mustard and my love for sweet things into one salad dressing!
Its really simple too! Just mustard, vinegar, maple syrup, oil, a spice or two, and wa-la! Sweet, tangy, and delicious. I poured it over a salad with spinach, mushrooms, cucumber, walnuts, raisins, and who knows what else.
