One of my favorite blogs is Jammin’ in the Kitchen and yesterday she posted a waffle recipe that used Instant Quaker Oatmeal packets to add amazing flavor to your batter. Well, I had to give it a try and they are delicious.
I used a packet of Instant Quaker Oatmeal: Lower Sugar Maple and Brown Sugar (my favorite
). Then I added 1/2 cup Krusteaz pancake mix, 1 tsp milled flax seeds, and a handful raisins.
These make some pretty beefy pancakes and boy were they filling but that’s part of what I love about Oatmeal Pancakes.
First, I added a really small smear of strawberry jam over the cakes, then I drizzled (lightly) blue agave over them. Add some raisins and a some raw rolled oats to make ‘em pretty. At the last minute I added a few Hershey’s Cinnamon baking chips and they were the cherry on top. Just what the flavor profile needed.
To make them less dense you could add more pancake mix to the single packet of oatmeal. I couldn’t even eat all six of the pancakes that my 1/2 cup mix made.
Today on 30 Days of Self Love and Reflection the topic is One Life . Tina brings up a very important topic about living every day to the fullest. Every day I know I put emphasis on varying parts of my life. Sometimes it’s classes, papers, due dates, coaching basketball, and most regrettably body image.
Between the ages of 18 and 23 I attended college and lived in the dorms, went to frat parties and costume extravaganzas, organized bbq’s at the beach and worked a few different jobs. I played some of the best basketball of my life and honestly I don’t actually remember most of it. During those years I was so focused on body image, embarrassment toward my love handles, the desire to get back to my trim pre adult body. I hated everything about myself and only wanted to be something different.
I’m so thankful I’ve moved past these desires and learned how to love myself for who I am, not how I look on the outside. I now live every day focused on things I love like the history of art, cooking and baking, and teaching basketball to teenage girls. I wish I would have focused on the wonderful things I was doing for those five years I lost to insecurity and self hate, I can NEVER get those experiences back. It’s important to live every day in the present. Everyone is beautiful just the way they are, you don’t need to be something else.
