I found myself in the ever-so-unusual situation of wanting something tropical feeling for dinner (if you have followed for long enough, you know this anything but unusual). :) I decided that some sort of fruit salsa over fish was the answer. I had some tilapia in the fridge that needed to be used, so that was perfect. I searched around and found some inspiration in different places and eventually settled on making my own mix. I ended up with this lovely creation.
Mango Avocado Salsa 1 Mango 1 Avocado 4 to 5 Chunks of Pineapple (1/2 inch chunks) 1/4 to 1/2 Red Onion 1/2 Tbsp Apple Cider Vinegar 1/2 Tbsp Canola Oil
Throw all the ingredients into a blender and go. It will be the consistency of a thinner version of guacamole. Use on whatever you like. So far I've used it on fish and as a salad dressing, and it was delicious! Tonight I'm using it in my lettuce wraps.
