Holla at ya' girl if the picture ain't wonky! Heyooooooooo!
I had to make up for that busted snack post with a visually appealing dinner that was as fast as it was healthy. Mission accomplished, dawg.
I got the recipe idea from Noshtopia months ago and just now got around to trying it, using every shortcut known to man to have it ready in 10 minutes flat! I think it's a great one to play around with, so I'll just list what I put in it (enough for two servings) real quick-like:
1 tbsp EVOO
2 cloves fresh (aka 1 tsp minced from the jar) garlic
~1/3 cup frozen chopped onions
1 package organic flax tempeh, cubed
1/2 envelope Sazon Goya
70g frozen organic mango cubes
1 bag organic (pre-washed!) baby arugula
This is how it goes. Ready? Got a pen? Or a blank Word document? Printer fired up? Commence to start!
First, sautee the first three thingies together 'til cooked through. Add the next two. Add the next one. Then toss in the arugula. Salt and pepper if you feel like it, I did. Bam.
I also sprinkled on some of my wasabi sesame seeds to make it even prettier, but I'm thinking shredded coconut for the leftovers, to complement the mango.
Pretty much all of the above could have an equally delicious substitute, following the same premise, which I loved; the fruit + vegetable combination was delightfully zingy.
