For some reason, lunch is my hardest meal to keep exciting. You don’t want to cook in the middle of the day, but sandwiches get old, and sometimes we’re out of bread. These little fresh tomato pizzas only take a minute to prepare, and about 10 minutes to cook.

Tomato Tart Pizza

1 pie crust (homemade or store bought)
1 tomato, sliced
1 ounce mozzarella cheese
Cut pie crust to fit small ramekins.
Slice tomato, pat dry and salt.
Assemble tarts with crust, sliced tomatoes and topped with cheese.
Sprinkle with oregano.
Bake in oven at 425 for 10-15 minutes, or until crust is cooked.
