Lunch Special: Tomato Tart Pizza

For some reason, lunch is my hardest meal to keep exciting.  You don’t want to cook in the middle of the day, but sandwiches get old, and sometimes we’re out of bread.  These little fresh tomato pizzas only take a minute to prepare, and about 10 minutes to cook.

Tomatoes are a great food to add to your kids diet.  They are

  • Full of lycopene, an antioxidant that supports heart health.
  • Full of vitamin C, A, and K
  • Known to support Bone health- important for those growing little ones.

So, make tomatoes delicious for lunch today with these little tomato tarts!

Tomato Tart Pizza

Ingredients
  • 1 pie crust (homemade or store bought)
  • 1 tomato, sliced
  • salt
  • 1 ounce mozzarella cheese
  • Oregano
Instructions
  1. Cut pie crust to fit small ramekins.
  2. Slice tomato, pat dry and salt.
  3. Slice cheese.
  4. Assemble tarts with crust, sliced tomatoes and topped with cheese.
  5. Sprinkle with oregano.
  6. Bake in oven at 425 for 10-15 minutes, or until crust is cooked.
