Lunch Time!

I made a wonderful sandwich for lunch!

Healthified Tuna Salad Sandwich

Yum yum!

After realizing I was running very low on groceries, I had to improvise on today’s lunch considering all I had was a can of tuna!
The result? a Healthy tuna salad sandwich!
Ingredients
 

  • 2 Slices of Sprouted Grain bread (I used Stonemill)
  • 5 Slices of Cucumber
  • 1/3rd can of chunk light tuna, packed in water, rinsed.
  • 1/2 Cup Broccoli Slaw
  • 1 tsp Lemon Juice
  • 1 tsp Olive Oil
  • 1 Tsp Griany Dijon Mustard
  • 1 Slice Light Swiss Cheese
  • 3-4 Cherry or Grape tomatoes, cut into halves
  • Salt and Pepper, to taste

 
Directions:
 
Mix together the slaw, lemon juice, olive juice, tuna, tomatoes, and mustard in a bowl. Add salt and peper to taste. I added a few sprinkles of Red Pepper Flakes to kick it up a notch. So good!
Then layer the the cucumbers, then the tuna salad, and swiss cheese slice in the sandwich bread, and you’re good to go for a quick and healthy lunch!

I also had a bunch of lovely fresh strawberries on the side (my favorite!)

so naturally sweet and scrumptious
