Put kale in a large bowl. Drizzle with olive oil and sprinkle with salt. Massage kale with your hands so it is coated with the olive oil and it begins to wilt and darkens. Add the lemon juice, currants, pepitas, and hemp hearts, and toss. Yum!
This salad is so simple yet so delicious.
I actually had this salad again for dinner tonight. I am striving to add a bit more green into my diet this week and am going to whip a Broccoli Salad after I finish blogging.
I don't know if it is the warmer weather or just my body talking to me but I am craving salads again. So look out- salad recipes of all sorts are about to be forthcoming on the blog.
The weather was amazing today, 54 and sunny. The birds are chirping and the flowers are starting to bud. Dare I say, it felt like spring today and it made me so HAPPY!
