Lovely Holiday Leftovers: Turkey (or Chicken) with Mango, Bell Pepper, and Avocado Sandwich

I find I can "juicy up" those dry holiday leftovers birds by taking some olive oil in a bowl, adding some of your favorite spices, I like dried basil, coarse ground black pepper, parsley (and whatever green stuff I got up in the cabinet), add boneless turkey or roast chicken pieces, toss in bowl, throw into frying pan, sizzle for a few minutes, then add to sandwich.

Turkey (or Roast Chicken) with Mango, Bell Pepper, and Avocado Sandwich

-1/4 avocado
-Pink Himalayan Salt (or Celtic Sea Salt)

-2 slices of your favorite quality bread (everyone's at a different level with their breads, I like Sami's Bakery Millet and Flax Bread )

-Boneless turkey or roast chicken
-1/4 organic mango, sliced
-1/4 organic small red onion, sliced
-1/4 organic colorful bell pepper, sliced
-4 to 5 dandelion greens (although I prefer organic baby spinach)


Add a few tablespoons of olive oil to bowl, add your favorite spices, Pink Himalayan Salt and Coarse Ground Black Pepper, add turkey or chicken, toss in bowl (I find it easier to mix while wearing cooking gloves). Throw it a hot frying pan for a few minutes.

Mash avocado and season with salt. Spread on bread. Top with turkey/chicken, mango, onion, pepper, and greens. Style Points count!!!!.
