Linguine with Roasted Broccoli, Pine Nuts and Goat Cheese

Happy Friday!

I’ve got two Noonday trunk shows this weekend that I’m so incredibly pumped for. My new little business seems to have hit the ground running, and I’m super thankful. I’ve got to squeeze in as much as I can now because next month at this time, I’ll be in pure wedding / honeymoon mode! Wahoo!!

This pasta dish is quick, healthy and delicious. You guys? I realized the only way I really *enjoy* eating broccoli is when it’s roasted. So much better! No stinky sock smell or mushy little trees. Roasted broccoli is absolutely delightful! Especially when it’s tossed it a creamy goat cheese sauce with garlic, pine nuts and linguine.

If you like goat cheese, you’ll love this! Just be sure to enjoy it immediately. It tends to dry out in the fridge. You could substitute the broccoli for cauliflower if you like, or add whatever other roasted veggies strike your fancy!
