I can officially say I’m BAAAAACCCKKK. I can’t even believe it’s been as long as it had, but I just needed some time to focus on my health, my mind, and my work. Sometimes I can get a little wrapped up in the blog world (as I think most of us can), and forget about some more important things going on in my life. Along with healing from my surgery, which is going very well, I have been working with Ryan from Greens for Good on making over my blog! I know it’s been up and running for a while, but after making some little tweaks here and there, I can finally say that it’s done. Didn’t she do a great job? If you ever want to learn about the thesis theme or need a header design-definitely hit her up. I’m so happy with how everything came out. And I’m a picky person!
I also wanted to thank an old friend of mine, Chris, who came through at the last minute to teach me a little more about my blog and also help me out to understanding everything about blogs in general. He is the Owner & Website Coordinator of GotBoda.com , as well as the web designer and developer for the company, and you should definitely check him out as well. He’s awesome!

Ok-so you must be wondering what I have been up to lately. What I’ve been eating, drinking, if I’ve been keeping up with my plan to get in shape before my friends wedding in May. There is so much to tell. First of all, I am now walking normally in my boot. It is big and clunky and annoying, but I’m so happy to be walking again. I put the crutches away and returned the scooter, and I hope I never have to use them again. KEEPING FINGERS CROSSED.
So along with taking some time off to focus on healing, I had a chance to think about my blog and my passions. I wasn’t really happy with the direction the blog was going because I was making it more like the other blogs I was reading instead of my own. I created this blog to write about delicious food, wine, traveling, and staying healthy. And I thought what perfect way to kind of re-vamp the blog now that I have re-vamped the look. So I’m using this as the *New* Eat, Drink, and Be Hopeful. I’m not going to be posting what I eat every single second, but more about the delicious healthy foods, the wine, and *hopefully* more traveling.
ARE YOU STAYING WITH ME?
Then I started thinking even more about what I am passionate about, and lately that has been REAL FOOD. I have had my times where I eat processed, disgusting, fattening, no good food (and yes, it can be tasty), but over the past few months, I have become passionate about eating REAL WHOLE FOOD. I have been intrigued by Jamie Oliver’s Food Revolution (sign petition here) , and I want to help change the way America eats. However, I need to start with myself. So along with the new blog, I am also in a way, starting a new me. A me that vows to eat only the real stuff. I know I have said this a million times before on my blog, but the other day it just hit me like a ton of bricks. It really sunk in this time. Everything we eat and put in our bodies affects how we feel, and eventually how long we live. I mean, why would you want to eat the fake stuff? And hopefully by writing this blog, and showing you easy and delicious REAL food is, I can inspire YOU to cut the crap, and eat the real stuff as well.
With that being said…
Way back before I left you, it was Easter. I went to a restaurant called Tempo, and I just wanted to share some of the amazing eats with you. Because this was REAL food, and in moderation-it’s fantastic!
Later that night my parents came back to my apt, and we made Easter dinner. It wasn’t your traditional Easter dinner, but I enjoyed it so much more! Paprika and brown sugar rubbed salmon over wilted spinach with asparagus and a quinoa blend. I was supposed to cook this dinner for my family, but because I was not able to stand on my foot yet, my mom took over and did most of the work. She is the best!
Some other REAL eats have been my morning smoothies. I’ve been doing this for a few weeks now. It’s a fact that liquids digest better then solids, so I’ve been trying to drink my breakfasts more and more.
The usual has been the Cherry Chocolate Bomb, but when I am out of cherries, I make some substitutions. The thing that seems to stay the same is chocolate!

Then I decided I wanted to make my own nut milk. A process…but 110% worth it. A new concept for most, but raw soaked nuts are much easily digestible then ones that aren’t. Soaking raw nuts in water actually deactivates and releases the enzyme inhibitors which allows them to be a bit easier to digest. After reading about nut milks in Living Raw Food (a book that I love!!!) I made hazelnut, cashew, and almond milk. It adds a lot of flavor and thickness to your smoothies. I made a chocolate, banana, hazelnut smoothie, and a double chocolate covered cashew smoothie. COMPLETELY AMAZING! It’s like drinking dessert for breakfast, and it’s healthy….and REAL!

I was completely out of protein powder( BOO) so I decided to go with this concoction:
If you think that’s amazing-check the end of this post for an AMAZING surprise! This was really rich, and very filling. I loved all the little bits of cacao nibs. It gave me something to crunch along with slurping. The best of both worlds! So-I’m curious…what’s your favorite smoothie combination? You clearly see that I love chocolate!
I forgot to take pictures, but here are a few things I didn’t forget to capture. The always delicious-Panera. Mediterranean veggie sandwich on whole grain bread, with a Greek salad (low fat balsamic on the side). Ate every last bite (minus the apple).
Side Note-did you know Panera had this awesome nutrition calculator ? Is this new or am I just really out of the loop? You can choose the exact items you ate and it tells you all the nutrition facts. It even allows you to make substitutions and add on or omit anything you added or took off your meal.
I visited my parents this past weekend, and my mom always has a wonderful home cooked meal ready. This time she did a Thanksgiving theme. We had turkey, wild rice medley, sauerkraut, fresh spinach, and cranberry sauce. There were tons of leftovers, so I had this combination for 3 days straight. Something about the salty and sweet thing I just can’t resist!
And a wonderful egg scramble with green peppers, onions, and tomatoes for dinner. Savory, and sensational, and sometimes you just want breakfast for dinner.
Along with the smoothies for breakfast-sometimes I want something a little more comforting. I can’t seem to get away from the toast and nut butter combo. This time using the most fabulous of all nut butters- Sunland Peanut butters . It’s taken me a while to write about them on my blog, but it is now time to show you. Don’t get me wrong, I love my Trader Joes, Whole Foods, and MaraNatha nut butters, but what makes this one better then all the rest is that this company makes every flavor of peanut butter under the sun. Even more flavors than Peanut Butter & Co. I’m talking cranberry, caramel, thai ginger, onion parsley, spicy southwestern, raspberry, cinnamon, dark chocolate, banana, and so many more . They carry sweet and savory flavors and have a line of All Natural peanut butters as well as a line of All Organic peanut butters. They were so so so nice to send me one of each flavor of their peanut butters, and I am so grateful. Delicious doesn’t even begin to describe how good these peanut butters are. And the combination’s are endless…try banana and dark chocolate or caramel and cranberry..it’s unreal!
I can’t wait to try the savory nut butters. I think I see a thai stir- fry in my future.
I also wanted to thank the nice POM people who sent me some of their POM Wonderful . I can’t drink this stuff straight, but I add a little to my water, or even sparkling water, and it’s a great way to flavor it while getting your antioxidant fix. I’m saving some to make Pomtini’s b/c those just sound too good to pass up.
And after discovering Discovering Raw , I had to try these raw brownie truffles . The easiest recipe ever-just combine raw pitted medjool dates, raw walnuts, and raw cacao powder to your food processor and let it do all the work. Form into little balls and roll in raw unsweetened coconut. Decadence never tasted better!
This is a MUST try recipe. Her other recipes look pretty darn good as well-so I think I’m gonna have to try them in my future.
