Lemon Blueberry Multigrain Pancakes

Good Morning!

I love Sunday Mornings. We all slept in, which was wonderful, and then made scrumptious Lemon Blueberry Multigrain Pancakes with Pomegranate Mocktails. Absolutely delicious and a great way to start the day.

The kids loved the Pomegranate Mocktails in the fancy glasses and the pancakes turned out great. Light and fluffy and the lemon tang was perfect with the blueberries. Yum! I served them with a little drizzle of Agave Nectar (out of maple syrup)and powdered sugar for the kids.

The Pomegranate Mocktails were made with:

1 oz shot of POM Juice
2 oz. Sparkling Water



Lemon Blueberry Multigrain Pancakes

1 cup Whole Wheat Pastry Flour
1/3 cup Blue Corn Meal
1/3 cup Spelt Flour
1/3 cup Rolled Oats
4 tsp Evaporated Cane Juice Sugar
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 tsp lemon zest
1 1/2 cups low-fat buttermilk
1/2 cup of Almond Breeze Unsweetened Vanilla Milk
2 large eggs
2 tbsp Canola Oil
1 tsp vanilla extract
1 cup of blueberries

Cooking Spray

Heat a large nonstick skillet over low heat while preparing the batter.

Mix flours, cornmeal, oats, sugar, salt, baking powder, baking soda and lemon zest in a medium bowl. In another bowl combine the wet ingredients, eggs, milk, oil and vanilla. Pour wet ingredients into dry ingredients and whisk until just mixed.

Increase heat to medium and spray skillet with cooking spray. Pour batter 1/4 cup at a time and add handful of blueberries to each pancake as it cooks, then turn and cook other side. Serve hot.

These were awesome. I loved the texture of the blue cornmeal and oats and the lightness the buttermilk gave to the pancakes. Super, super good!

Nothing like pancakes on a Sunday Morning!

On the agenda for the rest of the day is cleaning up the house.... Daddy is coming home. My husband makes me laugh, I am a bit messy and my husband is a bit OCD about neatness. I am not sure how we got together.... he is the type that has to fix the magazines on the coffee table just so before going to bed. I am the type that you would not know I am messy by my appearance but just don't notice some of the messes he sees. So before he comes home from traveling, I always make sure the house is neat and clean, but he says he suspects that there is A LOT of scurrying around to make that happen and to be honest there is. So the kids and I are going to clean the house,go to the store, workout and go to Emmet's last Lacrosse game of the season. The weather is a bit cooler and because of the rain yesterday, everything looks nice and green.
