Just realized I haven’t posted my lasagna recipe yet. I have to say, people love it! If I bring dinner to a neighbor, 9 out of 10 times, its lasagna because It turns out every time. I’ll ususally try to put any remaining veggies from the fridge. This time I used a green pepper, mushrooms, onions, and a handful of baby spinach (into the sauce, rather than layered).
Our leftover Triple Berry Slaw was a perfect compliment to our lasagna.
Then I had a spaghetti squash that had been in my fridge for about 3 weeks. Those things keep forever without going bad. I don’t know what took me so long to cook it up. All I did was
puncture it,
put it in the microwave for 6 minutes.
Cut it apart.
Scrape the flesh out with a fork so its stringy.
Added butter, parmesan cheese, and salt.
The kids loved this. It wasn’t a far stretch from their normal favorite of Angel Hair, butter, and parmesan cheese.
I’m off for a long run this morning (12 miles). Normally I would run with my good friend Eliece, but our schedules wouldn’t work together this week. We are getting ready for a half marathon this fall. Have a great Wednesday.
