It is a gorgeous day here in Portland, 82 degrees and sunny. It is
funny how you forget all about the rainy season during the summer. We
got a touch of rain this past weekend and it jogged my memory so I am
going to take full advantage of this nice weather while I can!
So I am in full love fest mode with Kale. I just can't seem to get
enough of the stuff and imagine my body must really need it. I made a
most delicious salad last night and have already enjoyed it for lunch as
well. As I said, I just can't get enough Kale in my system! It really
makes me feel great and provides me with a bunch of energy.
Massaged Kale Salad with Pear, Avocado and Sunflower Seeds
1 bunch of purple Kale, chopped
1 tsp sea salt 1 firm but ripe pear, chopped
1/2 red onion, thinly sliced
1/2 an avocado, diced
1 tbsp sunflower seeds
1 tbsp pepita seeds
Dressed with 1 tsp olive oil, 1 tbsp dijon mustard and 1 tbsp apple cider vinegar whisked together.
Sprinkle bite-size kale with 1/2 teaspoon of the salt and begin
to squeeze the kale and salt vigorously with your hands so that the kale
softens and moisture begins to sweat out. Massage the kale until it’s
moist and tender. Add pear, avocado, onion, sunflower and pepitas to kale.
Whisk together apple cider vinegar, olive oil and dijon mustard. Dress salad,
toss and serve. Enjoy!
This salad is absolutely delicious and so super filling.
I am also fan of coconut oil and saw this new Coconut Spread from Earth Balance at Whole Foods the other day and had to give it a try.
Bake, saute, stir-fry and amaze with this creamy-smooth butter-busting delight made with extra virgin coconut oil.
I tried this Coconut Spread on a piece of Whole Grain toast and found it very tasty. I don't eat toast with butter or coconut spread very often but it hit the spot along side the Kale Salad.
I am going to bake and cook with this spread and let you know what I think but so far I really like it. It is actually mix of coconut oil and canola oil, very spreadable and might be a good alternative to butter/vegan butter.
So I am officially done with work for the week and have a busy weekend ahead. We are also planning a mini-trip to Seattle next weekend and I am really looking forward to exploring more of Seattle. It is a very cool city and is only 3 hours away from Portland. My son, Emmet is actually going to be participating in a Longboarding Race in Bellevue. He has been begging me to let him participate and the race is geared toward beginner (younger) skaters so I am going to be surprising him with this news that he gets to go but has to promise me not to hotdog and be CAREFUL! His longboard teacher told me that he thinks Emmet is ready and that it would be a good experience for him. Let's hope he is right.
