Kale, Grape and Feta Salad with Marzetti Simply Dressed Champagne Dressing

Good Afternoon and Happy Monday!

I hope everyone had a great weekend.  We took the kids to the Portland Symphony Youth Concert of Peter and the Wolf yesterday and it was fantastic!  I know I am a kid at heart but I really enjoyed the whole concert and the excellent dance performances by the Dance West group.  My kids enjoyed the concert too:)

On the way home we stopped at the Farmer's Market and picked up some fresh Kale for yet another salad.  I am telling you, I am addicted to this stuff right now and made a wonderful Kale, Grape and Feta Cheese Salad topped with Marzetti Simply Dressed Salad Dressing!

What our dressings don’t contain are preservatives, trans fat, high fructose corn syrup, MSG and artificial flavors. I generally make my own dressing but am a big fan of Champagne Dressing and was excited to give the Marzetti Simply Dressed Salad dressing a try.  I also liked the fact that I knew what all the ingredients were on the label and that there were not too many ingredients as well.
Marzetti Simply Dressed Salad Dressing comes in a variety of flavors and I am going to try the Strawberry Poppyseed next time!

1 bunch of kale, chopped into bite-size pieces 1 tsp sea salt
1 cup of Holiday Seedless Grapes,halved 1/4 cup sliced almonds
1/4 cup feta cheese
Put the chopped kale into a bowl and sprinkle with sea salt.  Then massage the salted kale until the leaves soften and become bright green.  You really need to work the kale, so get in there and give it a good massage!  Then add grapes, almonds and feta cheese and give it a good toss.  Next add the champagne dressing and and toss until combined.


This salad is so yummy! The champagne dressing is perfect with the sweetness of the grapes and the saltiness from the feta cheese.  The almonds add a nice crunch. 

It is a simply gorgeous day outside and I have got to go and enjoy it while I can!  We have soccer practice this evening and the 65 and sunny weather is going to be a nice change from our last few practices in which we have come home wet and covered in mud.

I am off for a quick run before picking up the kids.
