Kale, Goat Cheese and Egg White Crust Pizza

Good Evening!

I hope everyone is doing well.  Summer is in full session and we are busy little bees.  Zoe and Emmet have started their summer camps and are really enjoying them.  I have been working as well as cleaning and purging our home.  It is inspection week and I need lots of prayers that all of this goes smoothly.  We had the house thoroughly inspected two years ago and have maintained the property and have not had any problems but when some expert is being paid to inspect the home they always seem to come up with something!  Steve and I laugh because the issues that have come up in past home inspections are never what you expect.  So we are praying things go smoothly.  We had one inspection today and two more to go and then I will let you know if I can relax and celebrate!

Needless to say I have been a bit stressed but have not used food as my crutch this time around.  I have been very concious of my food choices and am happy to report that I was back down to my happy weight this morning.  I made a choice not to add extra poundage to my stress level.  I have not been able to run in days but have stayed active and lifted weights but I so miss my runs!  We are all adjusting to the new summer schedule and it has been blasting hot here so have not been inspired to run at 12:00pm.

I have been craving comfort food and pizza is always the ticket for that--I made a couple healthy one's lately and thoroughly enjoyed them.

The first one was an egg white crust pizza topped with sauteed kale, tomatoes and goat cheese!  This was amazing and healthy.



Kale, Goat Cheese and Egg White Crust Pizza

2 egg whites
2 cups chopped kale
1 tsp extra virgin olive oil
1 garlic clove, minced
1/4 cup diced tomatoes
2 tbsp goat cheese

Heat skillet over medium heat.  Add olive oil and garlic and kale and saute for 3-4 minutes or until slightly wilted.  Remove from heat and set aside.  Spray skillet with cooking spray and add egg whites.  Cook egg whites like an omelet and then top with the sauteed kale, the tomatoes and goat cheese and cook for another 1-2 minutes.  Remove from heat and enjoy!

The next pizza is an Arugula,Tomato and  Goat Cheese Naan Pizza.  This is another super easy pizza to make and will help cure that pizza fix in a healthier way.



Arugula, Tomato and Goat Cheese Naan Pizza

1 whole wheat naan
1 cup diced basil, garlic, oregano canned tomatoes
1/3 cup shredded mozzarella cheese
2 tbsp goat cheese
1 cup arugula

Preheat oven to 425 degrees.  Top naan with diced tomatoes and cheeses. Bake for 15-20 minutes until cheese is golden and bubbly.  Remove from heat from and top with arugula.

Enjoy!

When I am seeking comfort I have to start my day with good ol' oats. 



Blueberry Almond Chia Oats

1/2 cup rolled oats
1/2 cup skim milk
1/2 cup water
1 tbsp chia seeds

Combine above ingredients in a small pot and cook over medium heat for 4-5 minutes.  Remove from heat and top with:

3/4 cup fresh blueberries
1 tbsp slivered almonds
drizzle of honey

Delish!

My other comfort food is Cereal! 

Heritage Bites with Banana and Blueberries and Almonds

1 cup Nature's Path Heritage Bites
1 banana, sliced
1/2 cup blueberries
1 tbsp sliced almonds
3/4 cup skim milk

Yum!

I also need a few extra prayers for my mother who is traveling to Medjugorje tomorrow.  I am hoping that she has safe travels and an amazing trip.  She is going with a group from her church and know that she has wanted to visit Medjugorje for quite some time so am really happy that she decided to go. I believe that this trip is going to be a bit more rugged for her.  She is used to traveling in style and I don't think that that is what Medjugorje is all about!  I am proud of her for having an open mind and following her heart.  I can't wait to hear all about it when she returns.

Time to get the kids cleaned up and ready to read.
