Interval Running + Energy Food

Good Evening!

We have had a very busy but productive first summer day. As you may have noticed, I like routine and am a bit flustered by the change in schedule. I mostly work in the morning and that happens to be when all the kids camps start as well. Luckily my husband works from home and can help them get to their destinations and I am free to pick them up, but being the control freak that I am, I want to be able to make sure they are dropped off safe and sound and having a good time. So Zoe had a great time at her art class at the AMOA today. Emmet tagged along with me this morning to Baby Boot Camp and then to my training session (and he was a little trooper!) we then picked up Zoe and he was so impressed with the Austin Museum of Art that he wants to sign up for a class too. (I had tried to talk him into one earlier this spring but was not interested so I am thrilled!)

We got home around 12:45pm and I was hungry! We had stopped and picked up a latte on the way... I needed MORE coffee today and the skim milk tied me over until lunch. So this may sound weird, but since I only used half an Ezekiel English Muffin this morning, I felt it calling my name... eat me, eat me! So I had two of my favorites for lunch:

1/2 Ezekiel English Muffin with Almond Butter, Banana and Fage 0% Greek Yogurt with Banana, Raspberries and Almonds.

1/2 Ezekiel English Muffin
1 tablespoon Almond Butter
1/2 Banana, sliced

2/3 cup Fage 0% Greek Yogurt
1/2 Banana, sliced
1/4 cup raspberries
4 almonds, chopped

I admit that I did not want to work out this afternoon, but need to start the summer off right and fit in my workouts when I can. I jumped on the treadmill and ran intervals for 45 minutes. Doing intervals makes the time go by quicker and burns more calories. You run at 5 for 2 minutes then bring it up to 7 for a minute and continue to build, 5.5 to 7.5, 6.5 to 8.5 and then bring it back down and do elevation work, climb for 2 minutes, sprint for 1, and ecetera. I was really glad I did it after the fact. I then did the Ab Ripper series and got the kids ready for Kumon.

Dinner was the most delicious Turkey Burger for dinner! We had grilled turkey burger on Saturday night and still had a few left and I have to say it hit the spot.

Turkey Cheese Burger

1 Jennie O Lean Turkey
seasoned with a little salt, pepper and Italian Seasoning, grilled
1 Whole Wheat Bun
1 slice soy cheese, cheddar

along with some orange pepper slices, watermelon wedge and bread and butter pickles. This was a very summery meal and I loved its simplicity.



I have held off from dessert, but who is kidding who... you know I am going to have a little something, but so far I am happy with my eats and exercise and am looking forward to a little something sweet to finish the day off with. I have something I am a little excited about....
