The new copy of Vegetarian Times arrived in our postbox this week. Hurray! So many inspiring recipes to choose from in the January issue. Pick up a copy if you get a chance. As you may have gathered, this isn't one of our original recipes. But, as usual we tweaked it up a bit.
Since this isn't our recipe and we did follow the recipe for the filling almost to the letter, I won't post it here. What I will tell you is that you can pick up a copy of the magazine, wait for the recipe to be posted on the Vegetarian Times website, or use whatever recipe you have or find for Samosa filling. =)
The Vegetarian Times version of this dish called for a whole wheat pie crust made from scratch. Being gluten free and not being "baking minded" - that just wasn't gonna happen. Instead I picked up a box of gluten free pizza crust mix. Wub whipped up the mix and even got creative with his garnish. (Have I mentioned that I love that kid!?!)
It was beautiful, delicious, and very filling. Oh, and just a tip...by baking this pie in a well-seasoned cast iron pan you can easily get your pie to "release" and serve it whole on a platter for a very nice presentation. This would make a lovely Christmas main dish.
