Increasing Veggie Intake

Learn to steam vegetables the right way. Thicken soups, stews, and sauces with pureed vegetables for added zest. Use frozen veges instead of canned vegetables when fresh ones are not available. Add the following to your garden: green peppers, broccoli, cauliflower and red cabbage. Treat vegetables gently: Bruised produce equals vitamin loss. Decrease the meat and increase the vegetables called for in stews and casseroles, which will also dramatically cut back on their fat content. Keep washed and trimmed carrots and celery sticks on hand for snacking. Add finely grated carrots, pumpkin, or zucchini to baked breads and cakes. What a tasty way to get your vegetable!
