So Binty is quarantined at home with a weird virus. I'm feverish, achey, chilled, and not so fun GI symptoms. Following my doctors directions for a bland diet and Mom's reccommendation for the BRAT diet (bananas, rice, applesauce, toast) in the gluten-free, dairy-free fashion is not too tough, but not too exciting either. For bad GI bugs, for GF/CF-ers, I advise unsweetened applesauce, rice cakes (to soothe a queasy tummy instead of gluten-laden crackers), mint tea, and bananas. But bland diets can get...well...bland. I indulged in a "spiced-up" bland banana --
Oven Baked Bananas
1 banana, sliced
1 tsp cinnamon
1 tsp Sugar-free sweetener
juice of 1/4 lemon
Directions: 1. Preheat oven to 350. Put sliced banana in an oven safe pan, sprinkle with sweetener and cinnamon, and top with lemon juice. 2. Bake for 10-15 minutes. Enjoy!
