That dinner sounds good enough to me! But for your meat-eating friends, here’s what I’d do:

Make the spaghetti squash as planned, but make a sauce to go on it. You can use store-bought marinara as the base, but then go nuts with other veggies (broccoli, cauliflower, zucchini, carrot, onion, spinach, kale, etc.). Just saute ‘em up and add to the sauce. You can also add delicious fresh herbs and spices, like basil and garlic.

After you doctor your store-bought sauce to your liking, set some aside. Then, brown some ground beef, turkey, chicken, or bison (whatever’s cheapest, but make sure it’s organic/grass-fed/etc.). Add the meat to the sauce you set aside. That should oblige the meat-eating folks, but not blow your budget, either. Plus, you still have a meal that’s mostly vegetarian. If you decide you just can’t buy meat for moral reasons, use beans in the sauce instead.
