I can’t believe I forgot to tell you all about the best part of my new job – I GET TO WALK TO WORK! Yep, that’s right. I am exactly 1 mile from the ol’ workplace which means I get to save gas, avoid traffic and get a solid 2-mile walk in everyday. It’s the little things that bring a smile to my face

A FREE loaf of French Meadow Sprouted Spelt Bread. Retail value: $6.59. I also got a FREE bottle of organic agave syrup. Retail value: $6.89. Score and score.
Obv, I had to use this newfound bread at breakfast, so I concocted Ol’ Faithful:

AB+B toast and a glass o' skim milk
Mid-morning brought along a snack attack so I channeled Cleopatra and ate my grapes straight off the vine. Unfortunately, I had no man servants to fan me with banana leaves while doing so.

I met up with a dear, old friend for lunch who I hadn’t seen in awhile. Unfortunately for you guys, it was one of those times when photographing your food isn’t really appropriate or important. However, we went to a bomb diggity Costa Rican restaurant called (what else?), Cafe Costa Rica.
I had a ginormous vegetarian plate of rice, beans, plaintains, cilantro and tomato. Twas’ bomb diggity.
When I arrived back at work, I found out my presh co-worker baked a plethora of yellow cupcakes with chocolate frosting and sprinkles with a welcome reception para moi today! So of course, my boss and I had a little fun with them before the guests arrived…

…and then I promptly devoured one. Yellow cupcakes + chocolate frosting = classic bomb diggityness.
The day flew by like whoa, and before I knew it, I was walking the 1 mile home. Then I had a tough decision to make: go to yoga at 7:30pm or attack the pile of laundry sitting in my closet. Unfortunately, the laundry won out. In fact, I am actually blogging right now from the laundromat (thanks to some covert Wi-Fi stealing).
However, I did need some dinner sustenance beforehand. No need to always go to a Chipotle for a burrito dudes and dudettes, the homemade kind is just as tasty…

1/4 cup cumin-spiced black beans
1/4 cup salsa
1/2 avocado
lettuce
fajita veggies (peppers, onions & tomatoes sauteed in EVOO)

It was the definition of a hot mess.
Apparently this also made it in my mouth after dinner…

yep, more pineapple coconut milk ice cream goodness
Tasks for the evening:
- Fold laundry
- Put together IKEA kitchen storage (which knowing IKEA, could take 5 minutes or 5 hours)
- Read blogs
- Figure out which health insurance I want
- Organize finances/make a budget
Yep, I’m officially a grown-up.
Apparently, I try to sidestep this fact by repeatedly using the word “bomb diggity,” hoping it will prolong my youth.
