How to Fill a Empty Plate Fast -Thai Style Coconut Tilapia

 Sometimes you simple don’t want to spend too much time in the kitchen. Whether you’ve had a long day at the office, or the kids have just been too much to handle, some days you want to just have something that is quick, easy and yes, still nutritious. Well, if tonight is such a night, I’ve got the recipe for you. 

Thai Style Coconut Tilapia

Serves: 4
Ingredients
Instructions
  1. In a large saucepan heat oil and lemon juice until sizzling.
  2. Add in the diced onions, and saute until golden.
  3. Place the tilapia in the pan, and sprinkle a little bit of curry powder on each side- just enough to do a light coating.
  4. Add just enough water to cover the bottom of the fish and lower the heat to a simmer.
  5. Simmer for about five minutes, or until the fish becomes slightly tender. Carefully flip the fish, a can of coconut milk, and another squeeze of lemon juice.
  6. Stir everything until the fish, and onions are evenly coated. Feel free to add more water if needed.
  7. Cover and allow to cook on simmer for approximately 5-7 minutes more, or until the fish is fork tender.
  8. Serve over rice with plenty of sauce.
  9. It’s a protein packed meal that is easy to make.
