Hot for Ice Cream

This weather is so nice! The skies are blue, we have a slight breeze, and it was in the low 60s today – too bad there’s no guarantee it will stay like this for the next few months. I’m just ready for it to still be light outside when we get home!

Nick ended up working a little late tonight, so when we got home, he just took Maggie out in the yard to play (instead of going on a long walk) while I washed dishes and got dinner out and ready.

I did snack on a few supercharge me cookies before heating up dinner –

These cookies are so addicting! I even make a double batch for us, and they don’t last a full week in our house. I guess I just inherently knew it was chocolate chip cookie week, right VeggieGirl ? ;)

Dinner tonight was easy leftovers: tuna casserole and broccoli.

I found this cashew ice cream at Annie Kay’s (a local health food store) and finally gave in. The best part?

Blue Mountain Organics , the company that makes the Cashew Creamery , is LOCAL. Yup – right here in southwest Virginia. I stole a taste a minute ago, and this is the best coffee flavored ice cream I’ve had. I’m pretty sure I’ll be having a bowl of this during LOST tonight.
