Holiday Goodies- Coconut Cardamom Pistachio Biscotti + More

Good Afternoon and Happy Thursday!

I have been having fun in the kitchen today.  I am a Kale Chip making fool!  I am actually selling Homemade Holiday Kale Chips and have quite a little following of devoted fans of my Kale Chips.  I find this so exciting since they are one of my favorite things to make and eat.  I am still taking orders if you are interested.

I also love to make Holiday Biscotti and my favorite Bittersweet Caramel Bites.  Oh my goodness the house smells divine right now.  The good thing is that I am giving these out pretty quickly because it can be dangerous to have all these goodies in the house at one time. 

Speaking of dangerous, my daughter wants to give all her friends a batch of cinnamon rolls. We make Vegan Sweet Potato Pecan Cinnamon Rolls and they are AMAZING!  So we will be tackling that project this weekend.  We gave those away a few years ago and they seemed to be a big hit.

Coconut Cardamom Pistachio BiscottiIngredients
DirectionsHeat oven to 350 degrees. In a large bowl, whisk flour, cornmeal, coconut, baking powder, cardamon and salt.In the bowl of an electric mixer fitted with the paddle attachment, mix eggs, sugar, oil, and zest on medium speed until well combined. Reduce speed, add flour mixture, and mix until just combined. Fold in cherries and pistachios.Transfer dough to a parchment-lined baking sheet and pat into a 14-by-4-inch log. Bake until firm and golden, 30 to 35 minutes. Transfer to a wire rack and reduce oven to 325 degrees.Once cool, transfer log to a cutting board and, using a serrated knife, cut diagonally into 1/2-inch slices. Arrange slices on parchment-lined baking sheet and bake, rotating halfway through, until just golden around the edges, 15 to 18 minutes. Let cool completely.
These taste amazing and the cornmeal adds a nice little crunch.  This was my trial batch so I will be making many more of these biscotti.

And last but not least, I am absolutey  "head over heals" in love with these Bittersweet Caramel Bites.

I have been popping one or two of these a day and need to give these away ASAP!  Addictive.

To balance out all of the baking I did workout and do a bunch of yard work today.  I am telling you, raking leaves is a great workout.  I have also noticed that my sweet tooth has diminished slightly by adding more protein into my diet and upping my veggie intake.   I am not saying I am not enjoying a treat or two but my actual "craving" has gone away. Yay!

I am off to help the kids with homework and whip up a healthy dinner.  Tonight we are having fish, broccoli and whole grain couscous.  I realize this is not the most exciting dinner in the world but it is one that my kids will eat so it is a win/win for me.
