Good Afternoon and Happy Thursday!
I survived teaching my first Hot Power Fusion yoga class and it went pretty well. There is always room for improvement but I now know that I can teach it and just have fun with it. Whew! The rest of my week is going to be busy but I am less stressed! Yah. I also woke up to a "happy" number on the scale and I have been battling the bulge the last couple of days so was happy to be back where I like to be.
I have had some great eats over the past few days and have been really loving the following
Oats (true love)
Hemp 15 Bread (new love)
SunButter + Apricot Preserves
Bananas (my all time favorite fruit)
Pears
Almonds
Chia Seeds
Eggs
Kale
Red Cabbage
Greek Yogurt
Shredded Spoonfuls
Dark Chocolate + Peanut Butter Chips
Dark Chocolate Goji Berries (fantastic!)
I will start with my beloved oats. My favorite combo has been Pear + Almond Chia Oats.
Pear + Almond Chia Oats
1/2 cup rolled oats
1/2 cup skim milk
1/2 cup water
1 tbsp chia seeds
cinnamon
Combine above ingredients in a small pot and cook over medium heat for 4-5 minutes. Remove from heat and top with:
1 small pear, diced
1 tbsp sliced almonds
drizzle of honey
Yum!
I also made some powered up Swiss Muesli and it was fantastic. As the weather gets warmer I tend to enjoy my oats in a cooler manner and muesli is a great alternative. I was also able to load them up with all sorts of "good for me" items such as ground flaxseeds, chia seeds and wheat germ.
Swiss Muesli
1/4 cup rolled oats
1/4 cup hot water
1/2 cup Fage 2% Greek Yogurt
1 tbsp dried cherry
1 apple, diced
1 tbsp oat bran
1/2 tbsp ground flaxseed
1/2 tbsp chia seeds
1/2 tbsp wheat germ
Drizzle of honey
1 small banana, sliced
Pistachios
Pour hot water over oats and let stand for 15-20 minutes. Add remaining ingredients except bananas, mix well. Cover and refrigerate overnight. Top with banana and pistachios.

I am always up for a good bowl of cereal and just had to share that Barbara's Shredded Spoonfuls are quite delightful as an afternoon snack topped with fresh raspberries and Silk Pure Almond Milk. Great little energy boost.
I have been eating a lot of eggs lately as my source of protein and absolutely love them. I like to buy Eggland's Best Organic Brown Eggs.
Eggland's Best eggs contain 10 times more Vitamin E than ordinary eggs, four times more Vitamin D,115mg of Omega 3, shown to be beneficial to cardiac health, 25% less Saturated Fat, 75% more Vitamin B12, over 50% more Vitamin A, 15% more Riboflavin (Vitamin B2), 200 mcg of Lutein, shown to contribute to eye health, and 10% of the daily recommended intake of folic acid.
The first night we had leftovers so I made a little Egg and Black Bean Bird Bowl.

1 cup steamed spinach
1/2 cup black beans
1/2 cup red cabbage
1/4 cup 2% Mexican Cheese
1 Eggland's Best Organic Brown Egg
Dallop of Guacamole
Yummy goodness in each bite.
I also made an amazing Egg, Tomato and Kale on Hemp 14 sandwich. Oh my lord, this was truly delicious.
Egg, Tomato and Kale on Hemp 14
2 sliced of Hemp 14, toasted
1 Eggland's Best Organic Brown Egg
2 slices of tomato
1 cup kale, sauteed
1 tbsp guacamole
And last but not least I have been enjoying a little mixture of goodies each night to satisfy my sweet tooth.
I indulge in:
1 tbsp Dark Chocolate Covered Goji Berries
1 tbsp Ghiradelli 60% Bittersweet Chocolate Chips
1 tbsp SunSpire Maranatha Peanut Butter Chips (these are to die for)
1 Dark Chocolate Covered Razz Cherry
Heaven!
Now I do also exercise daily and have been running 4-5 miles each morning, lifting weights every other day and doing yoga so I am balancing all my eats out. I am getting a little addicted to Hot Yoga-- I love just pouring sweat and love the way my body and mind feels after going.
I am looking forward to this weekend and my goal is to eat healthy and not indulge my sweet tooth too much.
